Ingredients
- Bread slices: 2 slices
- Ripe avocado: 1/2, sliced
- Fresh mozzarella cheese: 2 ounces, sliced
- Tomato: 1/2, sliced
- Pesto: 1 tablespoon
- Butter: 1 tablespoon
- Salt: to taste
- Black pepper: to taste
Instructions
- Step 1: Spread pesto on one slice of bread.
- Step 2: Layer mozzarella cheese, tomato slices, and avocado slices on top of the pesto-covered bread. Season with salt and pepper.
- Step 3: Top with the second slice of bread.
- Step 4: Butter the outside of the top slice of bread.
- Step 5: Place the sandwich, butter-side down, in a non-stick skillet over medium heat. Butter the top side of the sandwich while it's in the skillet.
- Step 6: Grill for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey. Cut in half and serve immediately.
Notes
- To keep leftover sandwich ingredients fresh, store the avocado with the pit still attached in an airtight container in the refrigerator.
- Reheat slices in a dry skillet over low heat, pressing down gently to re-melt the cheese without burning the bread.
- Serve this grilled cheese with a side of balsamic glaze for dipping to brighten the flavors.
- For extra flavorful results, lightly toast the bread slices before building your sandwich for added texture and stability.
