Ingredients

  • Bread slices: 2 slices
  • Ripe avocado: 1/2, sliced
  • Fresh mozzarella cheese: 2 ounces, sliced
  • Tomato: 1/2, sliced
  • Pesto: 1 tablespoon
  • Butter: 1 tablespoon
  • Salt: to taste
  • Black pepper: to taste

Instructions

  1. Step 1: Spread pesto on one slice of bread.
  2. Step 2: Layer mozzarella cheese, tomato slices, and avocado slices on top of the pesto-covered bread. Season with salt and pepper.
  3. Step 3: Top with the second slice of bread.
  4. Step 4: Butter the outside of the top slice of bread.
  5. Step 5: Place the sandwich, butter-side down, in a non-stick skillet over medium heat. Butter the top side of the sandwich while it's in the skillet.
  6. Step 6: Grill for 3-4 minutes per side, or until golden brown and the cheese is melted and gooey. Cut in half and serve immediately.

Notes
