- 1 pound beef sirloin, thinly sliced
- 1 head broccoli, cut into florets
- 1/4 cup soy sauce
- 2 tablespoons cornstarch
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 inch ginger, minced
- 1/4 cup beef broth
Instructions
- Step 1: In a bowl, whisk together soy sauce and cornstarch. Add the sliced beef and toss to coat evenly. Marinate for at least 10 minutes.
- Step 2: Heat vegetable oil in a large skillet or wok over high heat. Add the marinated beef and stir-fry until browned, about 2-3 minutes. Remove the beef from the skillet and set aside.
- Step 3: Add the broccoli florets to the skillet and stir-fry for 3-4 minutes, until they turn bright green and are slightly tender-crisp.
- Step 4: Add the minced garlic and ginger to the skillet with the broccoli and stir-fry for another minute until fragrant.
- Step 5: Pour in the beef broth and bring to a simmer. Add the cooked beef back to the skillet and stir everything together. Cook for another minute until the sauce thickens slightly.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in a skillet over medium heat, adding a splash of water or beef broth if the sauce is too thick.
- Serve over steamed rice or quinoa for a complete and satisfying meal.
- For extra tender beef, slice it thinly against the grain and don't overcook it in the stir-fry.
