- 1 medium head of cauliflower, cut into florets
- 2 tablespoons olive oil
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- For the garlic sauce: 2 tablespoons mayonnaise, 1 tablespoon minced garlic, 1 teaspoon lemon juice
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper.
- Step 3: In a separate bowl, combine panko breadcrumbs, Parmesan cheese, garlic powder, and paprika.
- Step 4: Dip each cauliflower floret into the breadcrumb mixture, pressing gently to adhere. Place the coated florets on the prepared baking sheet.
- Step 5: Bake for 20-25 minutes, or until the cauliflower is tender and the breadcrumbs are golden brown and crispy.
- Step 6: While the cauliflower is baking, prepare the garlic sauce by whisking together mayonnaise, minced garlic, and lemon juice in a small bowl. Serve the baked cauliflower bites immediately with the garlic sauce for dipping.
Notes
- Store leftover cauliflower bites in an airtight container in the refrigerator for up to 3 days, but note they will lose some crispness.
- Reheat in a preheated 350°F (175°C) oven or air fryer for a few minutes to re-crisp.
- Serve these crispy bites as a delightful appetizer, side dish, or even a fun vegetarian snack.
- For extra crispy cauliflower, lightly spray the breaded florets with cooking oil before baking.
