- Greek Yogurt (plain or vanilla), 1 cup
- Peanut Butter (creamy or chunky), 1/2 cup
- Honey or Maple Syrup, 2 tablespoons
- Mini Chocolate Chips, 1/4 cup
- Vanilla Extract, 1/2 teaspoon
- Salt, pinch
- Coconut Oil (melted), 1 teaspoon (optional, for easier removal)
Instructions
- Step 1: In a medium bowl, combine the Greek yogurt, peanut butter, honey (or maple syrup), vanilla extract, and salt. Mix well until everything is thoroughly combined and smooth.
- Step 2: Gently fold in the mini chocolate chips, distributing them evenly throughout the yogurt mixture.
- Step 3: If using, lightly grease a mini muffin tin with melted coconut oil. This will help prevent the bites from sticking. Alternatively, line the tin with mini muffin liners.
- Step 4: Spoon the yogurt mixture into the mini muffin tin, filling each cup almost to the top.
- Step 5: Place the muffin tin in the freezer and freeze for at least 2-3 hours, or until the bites are solid and frozen through.
- Step 6: Once frozen, remove the bites from the muffin tin and store them in an airtight container in the freezer. Enjoy straight from the freezer!
Notes
- For easy snacking, store these frozen bites in a freezer bag – they're less likely to stick together that way!
- Since they're best enjoyed frozen, no reheating is necessary (or recommended!).
