Delicious heavenly summer peach bars recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ cup rolled oats
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 cups fresh peaches, peeled and sliced
  • ½ cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Step 2: In a medium bowl, whisk together the all-purpose flour, rolled oats, baking powder, and salt. In a separate large bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the egg and vanilla extract. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Step 3: In a separate bowl, gently toss the sliced peaches with the granulated sugar, 2 tablespoons of flour, and cinnamon.
  4. Step 4: Spread the oat crumble mixture evenly into the prepared baking pan. Top with the peach mixture, spreading it evenly over the crumble.
  5. Step 5: Bake for 35-40 minutes, or until the topping is golden brown and the peaches are tender. Let cool completely before cutting into bars.

Notes

  • Store leftover bars in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
  • For a warm, gooey treat, reheat individual bars in the microwave for 15-20 seconds.
  • Serve these peach bars slightly warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra decadent dessert.
  • To prevent soggy bars, ensure your peaches are well-drained before adding them to the crumble topping; gently pat them dry with paper towels.
