Ingredients

  • Ground beef: 1.5 pounds
  • Mashed potatoes: 6 cups (prepared)
  • Shredded cheddar cheese: 2 cups
  • Cooked bacon: 1 cup, crumbled
  • Onion: 1 medium, chopped
  • Milk: 1/4 cup
  • Egg: 1 large
  • Breadcrumbs: 1/2 cup
  • Green onions: 1/4 cup, chopped (for garnish)

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). In a large bowl, combine ground beef, chopped onion, milk, egg, and breadcrumbs. Mix well with your hands until fully incorporated.
  2. Step 2: Press the meat mixture into the bottom of a 9×13 inch baking dish.
  3. Step 3: Bake the meatloaf for 30 minutes, or until the meat is mostly cooked through. Drain any excess grease.
  4. Step 4: Spread the prepared mashed potatoes evenly over the meatloaf. Sprinkle with shredded cheddar cheese and crumbled bacon.
