Ingredients
- Ground beef: 1.5 pounds
- Mashed potatoes: 6 cups (prepared)
- Shredded cheddar cheese: 2 cups
- Cooked bacon: 1 cup, crumbled
- Onion: 1 medium, chopped
- Milk: 1/4 cup
- Egg: 1 large
- Breadcrumbs: 1/2 cup
- Green onions: 1/4 cup, chopped (for garnish)
Instructions
- Step 1: Preheat oven to 350°F (175°C). In a large bowl, combine ground beef, chopped onion, milk, egg, and breadcrumbs. Mix well with your hands until fully incorporated.
- Step 2: Press the meat mixture into the bottom of a 9×13 inch baking dish.
- Step 3: Bake the meatloaf for 30 minutes, or until the meat is mostly cooked through. Drain any excess grease.
- Step 4: Spread the prepared mashed potatoes evenly over the meatloaf. Sprinkle with shredded cheddar cheese and crumbled bacon.
- Step 5: Return the casserole to the oven and bake for another 15-20 minutes, or until the cheese is melted and bubbly.
- Step 6: Garnish with chopped green onions before serving. Let cool slightly before cutting and serving.
Notes
- For easier slicing, let the casserole rest for at least 10 minutes after baking to allow the layers to set slightly.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat individual portions in the microwave or larger portions in a 350°F oven until warmed through.
- For extra flavor, stir half of the cooked bacon into the mashed potatoes before spreading them over the meatloaf.
