Delicious nutty, sweet, and the snack you’ll keep grabbing from the fridge recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 cup mixed nuts (almonds, pecans, walnuts, etc.)
  • 1/2 cup rolled oats
  • 1/4 cup shredded coconut (unsweetened)
  • 1/4 cup honey
  • 2 tablespoons chia seeds
  • 2 tablespoons peanut butter (or almond butter)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Instructions

  1. Step 1: Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
  2. Step 2: In a large bowl, combine the mixed nuts, rolled oats, shredded coconut, and chia seeds. Stir to evenly distribute the ingredients.
  3. Step 3: In a microwave-safe bowl, heat the honey and peanut butter for 20-30 seconds, or until melted and easily stirred. Add the vanilla extract and salt, and stir to combine.
  4. Step 4: Pour the honey mixture over the nut mixture. Stir well to ensure all the dry ingredients are coated evenly.
  5. Step 5: Spread the mixture in a single layer on the prepared baking sheet.
  6. Step 6: Bake for 15-20 minutes, or until golden brown and fragrant. Let cool completely before breaking into bite-sized pieces. Store in an airtight container in the refrigerator for optimal freshness.

Notes

  • For a chewier texture, press the mixture firmly onto the baking sheet before baking.
  • Store these grab-and-go snacks in the fridge for up to a week to maintain their deliciousness and prevent stickiness.
  • Enjoy these nutty bites straight from the fridge, or crumble them over yogurt or ice cream for added flavor and crunch.
  • If you want a little extra sweetness, drizzle a touch of melted chocolate over the cooled bars before breaking them apart.
