Instructions
- Step 1: Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper.
- Step 2: In a large bowl, combine the mixed nuts, rolled oats, shredded coconut, and chia seeds. Stir to evenly distribute the ingredients.
- Step 3: In a microwave-safe bowl, heat the honey and peanut butter for 20-30 seconds, or until melted and easily stirred. Add the vanilla extract and salt, and stir to combine.
- Step 4: Pour the honey mixture over the nut mixture. Stir well to ensure all the dry ingredients are coated evenly.
- Step 5: Spread the mixture in a single layer on the prepared baking sheet.
- Step 6: Bake for 15-20 minutes, or until golden brown and fragrant. Let cool completely before breaking into bite-sized pieces. Store in an airtight container in the refrigerator for optimal freshness.
