Ingredients
- Chicken breasts, boneless, skinless, cut into 1-inch pieces – 1.5 lbs
- Chicken sausage, fully cooked, sliced – 12 oz
- Red potatoes, cubed – 1.5 lbs
- Olive oil – 2 tablespoons
- Italian seasoning – 2 teaspoons
- Garlic powder – 1 teaspoon
- Shredded cheddar cheese – 2 cups
- Salt and pepper – to taste
Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a large baking sheet.
- Step 2: In a large bowl, combine the cubed potatoes, chicken pieces, and sliced chicken sausage. Drizzle with olive oil and toss to coat.
- Step 3: Season the mixture with Italian seasoning, garlic powder, salt, and pepper. Toss again to ensure even distribution of the seasonings.
- Step 4: Spread the mixture in a single layer on the prepared baking sheet.
- Step 5: Bake for 30-35 minutes, or until the potatoes are tender and the chicken is cooked through.
- Step 6: Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese evenly over the top. Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly. Let cool slightly before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat individual portions in the microwave or oven until warmed through, adding a splash of broth if needed to keep it moist.
- Serve this hearty bake with a dollop of sour cream or Greek yogurt and a sprinkle of fresh parsley for extra flavor and brightness.
- For even cooking, ensure the potato cubes and chicken pieces are roughly the same size; smaller pieces cook faster, preventing dry chicken.
