  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg
  • 1 package (3.4 oz) pistachio instant pudding mix
  • 1/2 cup milk
  • 1/4 cup chopped pistachios, for topping
  • 1/4 cup white chocolate chips, for topping
  • Green food coloring (optional)

Instructions

  1. Step 1: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. Step 2: In a large bowl, combine the sugar cookie mix, melted butter, and egg. Mix until a soft dough forms.
  3. Step 3: In a separate bowl, whisk together the pistachio pudding mix and milk. If desired, add a few drops of green food coloring for a more vibrant color.
  4. Step 4: Press half of the sugar cookie dough into the prepared baking pan. Pour the pistachio pudding mixture evenly over the cookie dough base. Crumble the remaining cookie dough over the pudding layer.
  5. Step 5: Sprinkle the chopped pistachios and white chocolate chips evenly over the top.
  6. Step 6: Bake for 25-30 minutes, or until the edges are golden brown and the center is set. Let cool completely before cutting into bars.
