Delicious skewered chicken salami eyeballs recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings

Ingredients

  • Chicken salami: 1 pound
  • Cream cheese: 4 ounces, softened
  • Green olives with pimentos: 1/2 cup, sliced
  • Black olives: 1/4 cup, sliced
  • Bamboo skewers: 12
  • Fresh parsley: 2 tablespoons, chopped
  • Paprika: 1 teaspoon
  • Garlic powder: 1/2 teaspoon

Instructions

  1. Step 1: Cut the chicken salami into 1/2-inch thick slices.
  2. Step 2: Mix the softened cream cheese with parsley, paprika, and garlic powder in a small bowl until well combined.
  3. Step 3: Spread a thin layer of the cream cheese mixture onto one side of each salami slice.
  4. Step 4: Press a sliced green olive (pimento side up) into the center of the cream cheese layer on each salami slice to mimic the iris of an eye.
  5. Step 5: Place a smaller piece of sliced black olive in the center of the green olive slice to create the pupil.
  6. Step 6: Fold the salami slices in half, securing the "eyeball" onto a bamboo skewer, arranging several "eyeballs" per skewer. Serve immediately or chill before serving.

Notes

  • For best flavor and texture, store leftover skewered eyeballs in an airtight container in the refrigerator and consume within 2 days.
  • Reheat chilled skewers gently in a warm oven or microwave for just a few seconds to soften the salami and cream cheese without melting.
  • Serve these spooky skewers as a fun appetizer at Halloween parties or themed gatherings, perhaps alongside a creamy dipping sauce.
  • Chef's tip: Use toothpicks instead of skewers for individual "eyeball" bites if you prefer a smaller, handheld snack.
