Ingredients
- Cooked Rice (preferably day-old): 2 cups
- Eggs: 2 large
- Cooked Breakfast Sausage (crumbled): 1/2 cup
- Frozen Mixed Vegetables: 1/2 cup
- Soy Sauce: 2 tablespoons
- Sesame Oil: 1 teaspoon
- Green Onions (chopped): 2 tablespoons
- Garlic (minced): 1 clove
Instructions
- Step 1: Whisk eggs in a small bowl and set aside.
- Step 2: Heat sesame oil in a large skillet or wok over medium-high heat. Add the frozen mixed vegetables and cook for 2-3 minutes, until slightly softened.
- Step 3: Push the vegetables to one side of the skillet. Pour the whisked eggs into the empty space and scramble until cooked through. Break the eggs into smaller pieces.
- Step 4: Add the cooked rice, crumbled sausage, and minced garlic to the skillet. Stir-fry everything together, breaking up any clumps of rice.
- Step 5: Pour soy sauce over the mixture and continue to stir-fry for another 2-3 minutes, until heated through and evenly coated with the sauce.
- Step 6: Garnish with chopped green onions before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat the fried rice in a skillet with a splash of water to prevent it from drying out.
- Serve this breakfast fried rice with a side of sriracha or chili flakes for an extra kick.
- Don't overcrowd the pan – cook in batches if needed to ensure the rice gets nicely toasted and doesn't steam.
