Ingredients

  • Cooked Rice (preferably day-old): 2 cups
  • Eggs: 2 large
  • Cooked Breakfast Sausage (crumbled): 1/2 cup
  • Frozen Mixed Vegetables: 1/2 cup
  • Soy Sauce: 2 tablespoons
  • Sesame Oil: 1 teaspoon
  • Green Onions (chopped): 2 tablespoons
  • Garlic (minced): 1 clove

Instructions

  1. Step 1: Whisk eggs in a small bowl and set aside.
  2. Step 2: Heat sesame oil in a large skillet or wok over medium-high heat. Add the frozen mixed vegetables and cook for 2-3 minutes, until slightly softened.
  3. Step 3: Push the vegetables to one side of the skillet. Pour the whisked eggs into the empty space and scramble until cooked through. Break the eggs into smaller pieces.
  4. Step 4: Add the cooked rice, crumbled sausage, and minced garlic to the skillet. Stir-fry everything together, breaking up any clumps of rice.
  5. Step 5: Pour soy sauce over the mixture and continue to stir-fry for another 2-3 minutes, until heated through and evenly coated with the sauce.
  6. Step 6: Garnish with chopped green onions before serving.
