- 1 lb Ground Beef
- 1 packet Taco Seasoning
- 1 (10 ounce) can Enchilada Sauce
- 1 (9 ounce) package Refrigerated Cheese Tortellini
- 1 cup Shredded Cheddar Cheese
- 1/2 cup Sour Cream
- 1/4 cup Chopped Green Onions
- 1 tablespoon Olive Oil
Instructions
- Step 1: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain off any excess grease.
- Step 2: Stir in taco seasoning and enchilada sauce. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Step 3: Add the cheese tortellini to the skillet. Stir to coat with the beef mixture. Reduce heat to medium-low, cover, and cook for 8-10 minutes, or until the tortellini is tender.
- Step 4: Remove from heat and stir in 1/2 cup of the shredded cheddar cheese.
- Step 5: Spoon into serving bowls and top with the remaining cheddar cheese, sour cream, and green onions.
