Delicious cheesy beef enchilada tortellini recipe with detailed instructions and nutritional information.

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 lb Ground Beef
  • 1 packet Taco Seasoning
  • 1 (10 ounce) can Enchilada Sauce
  • 1 (9 ounce) package Refrigerated Cheese Tortellini
  • 1 cup Shredded Cheddar Cheese
  • 1/2 cup Sour Cream
  • 1/4 cup Chopped Green Onions
  • 1 tablespoon Olive Oil

Instructions

  1. Step 1: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it apart, until browned. Drain off any excess grease.
  2. Step 2: Stir in taco seasoning and enchilada sauce. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  3. Step 3: Add the cheese tortellini to the skillet. Stir to coat with the beef mixture. Reduce heat to medium-low, cover, and cook for 8-10 minutes, or until the tortellini is tender.
  4. Step 4: Remove from heat and stir in 1/2 cup of the shredded cheddar cheese.
  5. Step 5: Spoon into serving bowls and top with the remaining cheddar cheese, sour cream, and green onions.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For best results, reheat individual portions in the microwave with a splash of water or beef broth to prevent drying.
  • Serve with a side of your favorite toppings like salsa, guacamole, or chopped tomatoes for extra flavor and freshness.
  • Don't overcook the tortellini; they should be tender but still hold their shape, so start checking for doneness around 7 minutes.
