- 12 ounces ladyfingers
- 1 cup strong brewed coffee, cooled
- 1/4 cup Amaretto liqueur
- 16 ounces mascarpone cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs, separated
- 1 teaspoon vanilla extract
- 1 1/2 cups pitted fresh cherries, halved
- 1/4 cup cherry preserves
Instructions
- Step 1: In a shallow dish, combine the cooled coffee and Amaretto liqueur. Quickly dip each ladyfinger into the coffee mixture, ensuring it's just moistened, not soaked, and arrange a layer in the bottom of a 9×13 inch baking dish.
- Step 2: In a separate bowl, beat the mascarpone cheese and granulated sugar until smooth and creamy. In a different bowl, beat the egg yolks until light and fluffy. Gently fold the egg yolks into the mascarpone mixture, then stir in the vanilla extract.
- Step 3: In a clean bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the mascarpone mixture in two additions.
- Step 4: Spread half of the mascarpone mixture over the ladyfingers in the baking dish. Top with half of the halved cherries and a spoonful of cherry preserves. Repeat layers with remaining ladyfingers, mascarpone mixture, and remaining cherries and preserves.
- Step 5: Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set. Before serving, dust with cocoa powder (optional).

- For best flavor, let your Cherry Amaretto Tiramisu chill overnight—the longer, the better!
- This dessert is delightful served slightly chilled, but avoid reheating as it will alter the creamy texture.
