Ingredients

  • All-purpose flour: 3 1/2 cups
  • Instant yeast: 2 1/4 teaspoons
  • Warm water: 1 1/2 cups
  • Olive oil: 1/4 cup, plus more for drizzling
  • Salt: 2 teaspoons
  • Brown sugar: 1/2 cup
  • Ground cinnamon: 2 tablespoons

Instructions

  1. Step 1: In a large bowl, combine flour, yeast, and salt. Add warm water and olive oil. Mix until a shaggy dough forms.
  2. Step 2: Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  3. Step 3: While the dough is rising, prepare the cinnamon swirl filling by combining brown sugar and cinnamon in a small bowl.
  4. Step 4: Punch down the dough and roll it out into a 12×16 inch rectangle. Sprinkle the cinnamon-sugar mixture evenly over the dough. Starting from one of the long sides, roll the dough up tightly into a log.
  5. Step 5: Slice the log into 12 equal pieces. Arrange the slices, cut-side up, in a greased 9×13 inch baking pan. Cover and let rise for another 30 minutes.
  6. Step 6: Preheat oven to 400°F (200°C). Drizzle the focaccia with olive oil and bake for 20-25 minutes, or until golden brown. Let cool slightly before serving.
