Ingredients
- All-purpose flour: 3 1/2 cups
- Instant yeast: 2 1/4 teaspoons
- Warm water: 1 1/2 cups
- Olive oil: 1/4 cup, plus more for drizzling
- Salt: 2 teaspoons
- Brown sugar: 1/2 cup
- Ground cinnamon: 2 tablespoons
Instructions
- Step 1: In a large bowl, combine flour, yeast, and salt. Add warm water and olive oil. Mix until a shaggy dough forms.
- Step 2: Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic. Place the dough in a lightly oiled bowl, turning to coat. Cover and let rise in a warm place for 1-1.5 hours, or until doubled in size.
- Step 3: While the dough is rising, prepare the cinnamon swirl filling by combining brown sugar and cinnamon in a small bowl.
- Step 4: Punch down the dough and roll it out into a 12×16 inch rectangle. Sprinkle the cinnamon-sugar mixture evenly over the dough. Starting from one of the long sides, roll the dough up tightly into a log.
- Step 5: Slice the log into 12 equal pieces. Arrange the slices, cut-side up, in a greased 9×13 inch baking pan. Cover and let rise for another 30 minutes.
- Step 6: Preheat oven to 400°F (200°C). Drizzle the focaccia with olive oil and bake for 20-25 minutes, or until golden brown. Let cool slightly before serving.
Notes
- To keep leftover focaccia soft, store it in an airtight container at room temperature for up to 2 days.
- For a warm and gooey treat, pop a slice in the microwave for 15-20 seconds.
- Serve warm with a dollop of mascarpone cheese or a scoop of vanilla ice cream for extra indulgence.
