Ingredients
Scale
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon chipotle powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cooked rice
Instructions
- Step 1: Cut the chicken breasts into bite-sized pieces.
- Step 2: In a large skillet, heat the olive oil over medium-high heat.
- Step 3: Add the chicken to the skillet and season with chipotle powder, cumin, garlic powder, salt, and pepper.
- Step 4: Cook the chicken until it is cooked through and no longer pink, about 5-7 minutes.
- Step 5: Serve the chipotle chicken over cooked rice.
Notes
- Store leftover chipotle chicken and rice separately in airtight containers in the refrigerator for up to 3 days.
- For best results, reheat the chipotle chicken in a skillet with a splash of water to keep it moist.
- Top your bowl with your favorite fixings like black beans, corn, salsa, avocado, and a dollop of sour cream for extra flavor and texture.
- For a deeper smoky flavor, bloom the chipotle powder in the hot oil for about 30 seconds before adding the chicken.
