Instructions

  1. Step 1: Preheat oven to 375°F (190°C). Line a 15×10 inch baking pan with parchment paper, leaving an overhang on the long sides to help with rolling. In a large bowl, beat egg whites until stiff peaks form. Gradually add ½ cup of the sugar, beating until glossy and stiff.
  2. Step 2: In a separate bowl, beat egg yolks with the remaining ¼ cup sugar and vanilla extract until pale and thick. Gently fold the yolk mixture into the egg whites.
  3. Step 3: In a separate bowl, whisk together the flour, cocoa powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined. Be careful not to overmix.
  4. Step 4: Spread the batter evenly into the prepared baking pan. Bake for 12-15 minutes, or until a toothpick inserted into the center comes out clean. Immediately invert the cake onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
  5. Step 5: Starting from the short end, tightly roll the cake and the kitchen towel together. Let it cool completely.
  6. Step 6: Once cooled, carefully unroll the cake. Spread the whipped cream evenly over the cake, followed by the cherry filling. Reroll the cake gently. Dust with dark chocolate shavings and refrigerate for at least 30 minutes before serving.
