Ingredients
- Olive oil: 1/4 cup
- Lemon juice: 1/4 cup
- Dried oregano: 2 tablespoons
- Garlic, minced: 4 cloves
- Dijon mustard: 1 tablespoon
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
- Dried thyme: 1 teaspoon
Instructions
- Step 1: In a medium bowl, whisk together the olive oil, lemon juice, oregano, garlic, Dijon mustard, salt, pepper, and thyme.
- Step 2: Place chicken in a resealable plastic bag or a shallow dish.
- Step 3: Pour the marinade over the chicken, ensuring all pieces are coated.
- Step 4: Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 8 hours for maximum flavor.
- Step 5: Remove chicken from the marinade and discard the used marinade. Cook chicken as desired (grill, bake, pan-fry, etc.)
Notes
- Store leftover marinade ingredients separately in airtight containers to keep the dried herbs fresh and the garlic pungent for future batches.
- For wonderfully moist reheated chicken, add a splash of chicken broth during the reheating process.
- Serve your marinated Greek chicken with a vibrant cucumber and tomato salad for a truly authentic Mediterranean experience.
- Don't over-marinate, as the lemon juice can toughen the chicken if left for longer than 8 hours.
