Ingredients
Scale
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup shortening
- 4–6 tablespoons cold water
- 1 cup white sugar
- 1/4 cup all-purpose flour
- 1 cup water
- 1 teaspoon vanilla extract
Instructions
- Step 1: Preheat oven to 350°F (175°C).
- Step 2: Prepare the crust: In a medium bowl, combine 1 1/2 cups flour and salt. Cut in shortening until mixture resembles coarse crumbs. Gradually add cold water, 1 tablespoon at a time, mixing until dough forms.
- Step 3: Roll out dough on a lightly floured surface and place in a 9-inch pie plate. Crimp edges.
- Step 4: Prepare the filling: In a saucepan, combine sugar and 1/4 cup flour. Gradually stir in water until smooth.
- Step 5: Bring to a boil over medium heat, stirring constantly. Reduce heat and simmer for about 3-5 minutes, or until thickened. Remove from heat and stir in vanilla.
- Step 6: Pour filling into pie crust. Bake for 30-40 minutes, or until crust is golden brown and filling is set. Let cool completely before serving.
Notes
- Store leftover pie in the refrigerator to keep the filling from getting too soft.
- For a warm treat, gently reheat individual slices in the microwave for a few seconds.
- Serve this humble pie with a dollop of whipped cream or a scoop of vanilla ice cream to elevate it.
- Don't overbake the crust – a light golden brown ensures it stays tender and flaky.
