Ingredients
- Chicken breasts (boneless, skinless): 2 large
- Feta cheese: 4 ounces, crumbled
- Hot honey: 3 tablespoons
- Olive oil: 2 tablespoons
- Garlic: 2 cloves, minced
- Red pepper flakes: 1/4 teaspoon (or more, to taste)
- Lemon juice: 1 tablespoon
- Fresh thyme: 1 teaspoon, chopped
Instructions
- Step 1: Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- Step 2: In a small bowl, combine hot honey, minced garlic, red pepper flakes, and lemon juice. Mix well.
- Step 3: Place the chicken breasts in the prepared baking dish. Drizzle with olive oil and season with salt and pepper.
- Step 4: Pour the hot honey mixture evenly over the chicken breasts.
- Step 5: Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Step 6: Remove from the oven and sprinkle the crumbled feta cheese and fresh thyme over the chicken. Let it rest for a few minutes before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in the microwave or oven to prevent the feta from becoming rubbery.
- Serve this chicken with a side of quinoa or roasted vegetables for a complete and balanced meal.
- For an extra flavor boost, marinate the chicken in half of the hot honey mixture for at least 30 minutes before baking.
