Ingredients
- Chicken breasts, boneless and skinless: 2 (6-8 oz each)
- Fresh mozzarella cheese: 8 oz, sliced
- Fresh basil leaves: 1/2 cup, chopped
- Heavy cream: 1 cup
- Olive oil: 2 tablespoons
- Garlic: 2 cloves, minced
- Parmesan cheese: 1/4 cup, grated
- Salt and pepper: To taste
Instructions
- Step 1: Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Step 2: Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes per side, until lightly browned.
- Step 3: Transfer the seared chicken breasts to the prepared baking dish. Top each chicken breast with slices of fresh mozzarella cheese.
- Step 4: In the same skillet, sauté the minced garlic for about 30 seconds until fragrant. Pour in the heavy cream and bring to a simmer. Stir in the chopped fresh basil and grated Parmesan cheese. Season with salt and pepper to taste.
- Step 5: Pour the basil cream sauce over the chicken breasts and mozzarella cheese.
- Step 6: Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the mozzarella cheese is melted and bubbly.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For best results when reheating, warm gently in a skillet over low heat with a splash of extra cream to prevent the sauce from separating.
- Serve this creamy chicken dish over a bed of pasta or with a side of roasted vegetables to soak up all that delicious sauce.
- Don't overcrowd the skillet when searing the chicken; sear in batches if needed to ensure proper browning, which adds depth of flavor.
