Ingredients
- Chicken sausage, pre-cooked: 4 ounces
- Eggs: 2 large
- Baby spinach: 2 cups
- Cherry tomatoes: 1/2 cup, halved
- Avocado: 1/4, sliced
- Feta cheese: 2 tablespoons, crumbled
- Olive oil: 1 tablespoon
- Salt and pepper: to taste
Instructions
- Step 1: Heat olive oil in a non-stick skillet over medium heat. Slice the chicken sausage and add it to the skillet, cooking until lightly browned, about 3-5 minutes.
- Step 2: Add the baby spinach to the skillet with the sausage and cook until wilted, about 1-2 minutes. Season with salt and pepper.
- Step 3: Push the sausage and spinach mixture to one side of the skillet. Crack the eggs into the empty space and cook to your desired doneness (over easy, medium, or hard).
- Step 4: While the eggs are cooking, prepare your bowl. Divide the sausage and spinach mixture between two bowls.
- Step 5: Top each bowl with a cooked egg, halved cherry tomatoes, avocado slices, and crumbled feta cheese. Season with additional salt and pepper to taste.
