Ingredients

  • Chicken sausage, pre-cooked: 4 ounces
  • Eggs: 2 large
  • Baby spinach: 2 cups
  • Cherry tomatoes: 1/2 cup, halved
  • Avocado: 1/4, sliced
  • Feta cheese: 2 tablespoons, crumbled
  • Olive oil: 1 tablespoon
  • Salt and pepper: to taste

Instructions

  1. Step 1: Heat olive oil in a non-stick skillet over medium heat. Slice the chicken sausage and add it to the skillet, cooking until lightly browned, about 3-5 minutes.
  2. Step 2: Add the baby spinach to the skillet with the sausage and cook until wilted, about 1-2 minutes. Season with salt and pepper.
  3. Step 3: Push the sausage and spinach mixture to one side of the skillet. Crack the eggs into the empty space and cook to your desired doneness (over easy, medium, or hard).
  4. Step 4: While the eggs are cooking, prepare your bowl. Divide the sausage and spinach mixture between two bowls.
  5. Step 5: Top each bowl with a cooked egg, halved cherry tomatoes, avocado slices, and crumbled feta cheese. Season with additional salt and pepper to taste.
