Ingredients
- Chicken sausage, sliced: 1 pound
- Broccoli florets: 1 large head
- Bell peppers (any color), chopped: 2 medium
- Red onion, sliced: 1 medium
- Olive oil: 2 tablespoons
- Garlic powder: 1 teaspoon
- Italian seasoning: 1 teaspoon
- Salt and pepper: To taste
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
- Step 2: In a large bowl, toss the sliced chicken sausage, broccoli florets, chopped bell peppers, and sliced red onion with olive oil, garlic powder, Italian seasoning, salt, and pepper. Ensure the vegetables and sausage are evenly coated.
- Step 3: Spread the mixture in a single layer on the prepared baking sheet. Avoid overcrowding the pan for even cooking.
- Step 4: Bake for 20-25 minutes, or until the sausage is cooked through and the vegetables are tender and slightly browned. Flip the sausage and vegetables halfway through cooking to ensure even browning.
- Step 5: Remove from oven and let cool slightly before serving.
Notes
- Store leftovers in an airtight container in the fridge for up to 3 days.
- For best results, reheat in a skillet over medium heat to re-crisp the sausage and veggies.
- Serve this flavorful dish over quinoa or rice for a complete and satisfying meal.
- Don't be afraid to experiment with different veggie combinations – zucchini, Brussels sprouts, or even sweet potatoes would be delicious additions!
